Showing text in OpenGL basically comes down to binding a texture with the characters and then rendering a quad per character with suitable texture coordinates. GLUT provides a few convenience fonts for English, but for Chinese you'll have to make your own textures. If you're using a graphics library on top of OpenGL it may handle the process of rendering them for you.

Slick has UnicodeFont which can render Unicode by caching glyphs to a backing texture on the fly.
