As the LWJGL site is down i cant really go through past posts,

I was wondering if its possible to keep the current desktop sensitivity, when grabbing the Mouse on Windows.

Also why is it, that the sensitivity changes?

I'm not sure that the sensitivity actually does change. The mouse is read directly from low-level, so any filtering and scaling Windows might have been doing probably isn't happening.
