In the lwjgl example Polygon.java, the value of 1.0f is a huge percentage of the 640x480 screen.  If I wanted 1.0f to correspond to one pixel, which value do I need to change?

Something like:

glOrtho(0, screenWidth, 0, screenHeight, near, far);

would be a good starting point. If you're not sure about near and far set them to -1 and 1. Also, see: http://msdn.microsoft.com/library/en-us/opengl/glfunc03_8qnj.asp
MSDN is a good source of info for all the gl functions as long as they're not later than v1.1
